Initially, Oremus was a vineyard - one of the most famous in Tokaj region. Although Oremus is mentioned since the beginning of the 16th century, in 1616, Oremus became the crown vineyard of the Rakozi’s royal family. Many centuries and regiments later, in 1993, Alvarez family purchased the Oremus and established a beautiful new winery. So, the Spanish legend met the Czars’ legendary wine. As you can see, patience is a unique virtue all over the world. Oremus means “let’s pray” in latin. It is sure that, whoever had the idea for this name, must have tasted the wines. Some general facts about Tokaji: Tokaj is the region. Tokaji are the wines of this region. Furmint and Harslevelu are the varieties. The vintage begins by harvesting only the intact grapes which are vinified into dry white wine. Some grapes are left on the vine to be affected by Botrytis and become Aszu grapes. Then, the second “round” begins. The Aszu grapes are picked one by one, in 25 kilos vats, the Puttonyos. These are added to 136 litters barrels, called gonci, that contain the dry white wine. If three buckets full of noble grapes are added on a barrel, we have Aszu 3 puttonyos with about 60gr/lt. residual sugar. The procedure is the same for the 4, 5 and 6 Puttonyos, where there is respectively 90, 120 and 150 gr/lt. of residual sugar. Add over 7 Puttonyos and we have the Aszu Eszencia, with more than 180 gr/lt. sugar. The Eszencia is the Aszu must which runs off naturally when the noble grapes are still in a large pit, waiting for distribution in the barrels. Having 600+gr/lt. residual sugar and not more than 5% alcohol, Eszencia is of the most expensive and the most long-lived sticky on the planet.
